Al Fresco Dining at Far View with James Strawbridge

Staying at Far View near St Breward on Bodmin Moor was a magical family experience. In particular it was the perfect setting to gather with friends and dine al fresco.

James Strawbridge Far View Cheeseburgers

As a chef I couldn’t help but admire the outdoor kitchen at Far View. Designed with functionality in mind it comes equipped with a gas grill, ceramic BBQ smoker, hot water on tap and a built-in fresh herbs garden. Plus with the fantastic views over the moors it really is a dream to cook in.

 

Nearby a huge dining table is nestled beneath majestic beech trees and is perfectly positioned to enjoy the sunset. Following dinner, you can retire to comfortable loungers on the patio and enjoy snug conversation around the fire pit.  

 

The property itself is a stunning spacious place to unwind with friends and family. I found the indoor kitchen a delight to cook in. In fact, the whole family loved staying at Far View – it was a holiday house like no other. Ideal for entertaining, I’d heavily recommend this property for wedding parties, family gatherings and those special big birthday parties.  

 

James Strawbridge Far View Cheeseburgers

 

Cheeseburger Recipe

 

Serves 6

 

INGREDIENTS

 

For the burgers

1 kg Cornish beef 

½ tsp grated nutmeg

Pinch of Sea salt and cracked black pepper

2 tsp olive oil

Bourbon barrel offcuts or woodchip

Sliced mature Davidstow cheddar

 

To serve

6 brioche rolls, toasted

12 rashers of smoked streaky bacon, cooked

Sliced gherkins

Little gem leaves

Sliced tomato

Mustard or burger relish

Onion rings

 

For the slaw

¼ red cabbage, shredded

½ fennel bulb, finely sliced

2 carrots, finely peeled

2 tbsp mayo

1 tsp wholegrain mustard

½ tsp finely chopped rosemary

Squeeze of lemon

Pinch of sea salt

 

James Strawbridge Far View Cheeseburgers

 

Method

1. In a large mixing bowl season your beef mince with nutmeg, salt and pepper. Form your beef into 6-8 burger patties and place on a lined tray while you preheat your BBQ. 

2. Brush the burgers with a little oil and cook on a hot grill. Sear on both sides for 1-2 mins and then add in a handful of bourbon wood blocks or oak woodchips to hot smoke the burgers. Cover the lid of your BBQ smoker or kettle BBQ and after 4-5 mins add your sliced cheese.

3. Hot smoke the cheese until melted. Toast your brioche burger rolls and add relish or mustard, lettuce, the smoked cheeseburger then gherkins and a slice of tomato. Top with cooked bacon and onion rings.

4. Serve with skin on chips and slaw on the side. Make the slaw by simply tossing all your shredded vegetables in mayo with mustard, a squeeze of lemon and some finely chopped rosemary. Season to taste.
